How to Make Quick, Full-Flavored Ramen Eggs

I put a ramen noodle soup recipe in my first cookbook (click here to check it out!) โ€” and yes, it even had a ramen egg with a recipe for that as well using miso paste and a lot more โ€” but that version is honestly more work than most people want to deal with on a random Tuesday. This one is the opposite: fast, bold, and less fussy, but still ridiculously delicious. It tastes like it marinated for days yet keeps the soft texture.

How to Make Quick, Full-Flavored Ramen Eggs

A tiny bit of background: ramen is this beautiful balance of broth, tare, noodles, and toppings, and the ramen egg is the thing that ties the whole bowl together. That jammy yolk and savory exterior bring richness and depth, and every shop has its own style. This recipe leans into a stronger brine because I like a punchier egg, but you can go lighter or deeper depending on how long you marinate.

And honestly โ€” theyโ€™re not just for ramen. These make incredible pickledโ€‘style snacking eggs straight from the fridge.

Yield:

6-8 ramen eggs (or enough to fit a quart jar)

Equipment (in order used):

  • Medium saucepan
  • Spoon
  • Cups
  • Large bowl
  • Ice bath setup
  • Quart jar with lid
  • Grater (for ginger, or can thin slice)

Ingredients (in order used):

  • 6-8 large eggs, soft-boiled
  • 1 cup soy sauce
  • ยพ cup seasoned rice vinegar
  • 1 finger fresh ginger (20g), shredded or grated
  • 1 garlic clove, quartered
  • A few Sichuan peppercorns
  • 1 chile de รกrbol or other hot pepper, chopped (optional)

Directions:

1. Bring a medium saucepan of water to a full boil.

2. Lower the eggs gently with a slotted spoon, reduce the boil slightly, and cook 6 minutes 30 seconds for a classic jammy ramenโ€‘egg texture.

3. Transfer immediately to an ice bath and chill at least 5 minutes.

4. Peel the eggs and set aside.

5. Make the brine: In a small saucepan, combine the soy sauce, seasoned rice vinegar, ginger, garlic, Sichuan peppercorns, and chile de รกrbol. (Feel free to lightly crush the peppercorns with a mortar & pestle.) Bring to a boil, reduce to a simmer, cover, and cook 5 minutes to extract the aromatics.

6. Remove from heat, keep covered, and let the brine cool completely โ€” either on the counter or in the fridge to speed it up.

7. Add the peeled eggs to the jar, then pour the brine over, ensuring theyโ€™re fully submerged.

8. Refrigerate and marinate according to the timing guide below.

9. Slice lengthwise and serve on ramen, rice bowls, or as a snack. Store up to 3 days.

Marination Timing Notes: This recipe uses a stronger brine than traditional ramen eggs, which is intentional โ€” it creates a deeper, bolder flavor. Depending on your preference, the eggs can be ready sooner or benefit from a longer soak.

  • 4โ€“6 hours โ€” Light seasoning; most flavor stays on the surface.
  • 12 hours โ€” Balanced flavor with a good mix of egg taste and marinade.
  • 12โ€“24 hours โ€” Strong, rich flavor; my recommended window.
  • 48 hours+ โ€” Very bold and salty; whites firm up and move toward a pickledโ€‘egg texture.

The “ramen” eggs are also great in noodle- or rice-based dishes too!
